You are in a restaurant. You order a burger with mayo on the side. You get it, and it has mayo *on* it. You don't like mayo on your burger, you wanted it to dip your fies into. Do you...

Just scrape off what you can and eat it. You don't want them to spit in your food as they're remaking it.
Bring it to the waitresses attention, and have them remake it. After all, that's how you ordered it.

If you asked the kitchen to remake it...

did you simply leave it at that? (I ordered mayo on the side, please)
did you explain yourself? (I ordered mayo on the side, not because I wanted to put it on myself, but because I wanted it for my fries).
did you ask for the burger to be comped?

If you need to explain youself to the waitress, why?

Well, it obviously makes a difference to the kitchen why I'm asking them to remake this burger. It will affect the way they do it.
I hate putting people out, and if I eplain to them in detail how I wanted the mayo for my fries, it makes them feel better.
Why the hell would they care why? They just have to remake it the way I ordered it!

If it was, say, an allergy or something, I'd probably be more militant, but--for example, I hate mustard. If they put mustard on it, I check to see if I can scrape it off (which usually I can and never notice it in the flavor) or just explain to the waitress. The few times I've sent something back, it's always been very fast and the service in general was so good that a mistake was, well, just a mistake.

Unless there were signs the waitress wasn't paying attention when I ordered, or the restaurant was deserted, or there were other signs of bad customer service, not a big deal. Then again, I'm easy.

I think the worst service I had was when an entire basketball team showed up on what was supposed to be a slow night. I felt terrible for the waitresses who had to deal with it and impressed that mine checked every time she passed my table if I needed anything, since it was kind of hard to hear over the racket from the team.

Ok... I never return anything!!! unless it's at a fine dinning establishment (Well... even then). They take offense and you might not have liked the mayo, but I will beat you would hate the stuff you can't find with your corrected order :(

There's always the fear/worry that the kitchen will do something nasty to your order, but I send it back. There are some food combos I can don't. I just make sure to be very polite about and hope for the best.

I'd scrape it off and ask for more mayo on the side for the fries. Because knowing what happens in kitchens, especially kitchens where things like burgers are served) I'd really hesitate to eat anything that came back out after I'd sent it back. I might however ask for a fresh bun if most of the may was on the bun.

I have a friend that hates pickles. If a pickle so much as touches her food, she sends the whole thing back and demands a new one.

Sometime I worry about what she will find in the new plate. :|
